Beetroot Rubare red, right? Yes! But in Australia we grow yellow, orange, pink-striped and white beetroot, too. The round part of a beetroot grows under the ground. Small beetroot are sweet. Big ones can get woody, but taste great when they are baked. You can eat the leaves when they’re young and tender.

The colour red can go all the way through your digestive system. It makes your pee pink – but there is nothing to worry about! It’s normal.

Try this!

Beetroot can’t be ‘beeten’ for sweet baked goodness. Take a whole beetroot, wash it and chop the leaves off, leaving a little bit of stem attached. Wrap it completely in tin foil and place in the oven at 180°C. Bake until soft. This will take 1 hour, or maybe 2 hours if your beetroot was really large!
Carefully unwrap the foil, rub off the skin and the stems (they should just slip off). Use your perfectly roasted beet in a salad, pink risotto, or drizzle with olive oil and eat with a pinch of salt. Yum!
