A sweet little Valentine’s treat

    For the biscuits:

  • 1 cup cashew butter
  • 1 Community Co free range egg (Community Co products proudly at home at IGA)
  • 1 tbsp honey
  • 1 tsp teaspoon vanilla essence
    For the filling:

  • 1 cup full-fat cream cheese
  • ½ tsp natural red food colouring
  • 1 tbsp lemon juice
  • Zest from half a lemon
  • 1 tbsp honey
  • 3 finely chopped strawberries

How to make:

  1. Preheat the oven to 160℃ and line a baking tray with baking paper.
  2. In a large bowl and using a wooden spoon, combine cashew butter, egg, vanilla and honey.
  3. Using your hands, carefully shape the dough into 24 small, heart shaped cookies, and place on the prepared tray. Use a fork to imprint each cookie.
  4. Bake in the oven for 10-15 minutes or until lightly golden. Leave to cool completely before assembling the kisses.
  5. To make the filling, combine all ingredients in a small bowl. Scoop mixture into a ziplock bag and snip off one of the corners (alternatively use a piping bag).
  6. To assemble, carefully spread the filling on the base of half the cookies and sandwich another cookie on top. These cookies are crumbly so handle with care.
